Blueberry Cobbler Oatmeal

The weather is starting to cool down (even here in Arizona).  Yesterday it was only in the 70’s for us and after a summer of 100+ degrees it feels cool.  As the weather starts changing our cravings and taste for foods can start to change.  We look for comfort foods that keep us warm from the inside out.

Blueberry Cobbler Oatmeal A

If you are a fan of overnight oats this is a great version for the cooler mornings.  I love overnight oats for the warmer months because the last thing I want to do when it is 100 degrees is to have a hot bowl of oatmeal, but for fall and winter I want something warming.  I love oatmeal for breakfast!  Breakfast is my favorite meal of the day and when I have a recipe this good I look forward to waking up just to eat breakfast.  What better way to nourish yourself on a busy morning than with a bowl of oatmeal.  You can add so many superfoods to oats that can send them over the top nutritionally.  Cinnamon and blueberries add to the health benefits of these oats.

Blueberry Cobbler Oatmeal B

Oats are actually harvested in the fall but are available all year round.  They are high in a fiber called beta-glucan which is great for lowering cholesterol levels.  They also contain a specific antioxidant known as avenanthramides that can prevent free radicals from damaging good cholesterol and help fight against heart disease.  These beautiful little grains can enhance immunity, stabalize blood sugars, and have been shown to help against childhood asthma.  Can your breakfast do that?

Ingredients

  • 1/4 Cup Oat Groats rinsed
  • 3 Large Dates pitted and roughly chopped
  • 2/3 Cup Milk of Choice divided (I used Hemp milk)
  • 1/4 Cup Rolled Oats
  • 2 Tbsp Raw Walnuts chopped (Soaked and Dehydrated preferred)
  • 1/2 tsp Ground Cinnamon
  • 1/2 Cup Blueberry's fresh or frozen depending on the season

Instructions

  1. In a small bowl or jar soak the oat groats and dates in 1/3 cup of milk overnight.
  2. In the morning, place the soaked oat mixture, rolled oats, and remaining milk in a small sauce pan.
  3. Over low to medium heat cook the oats until the rolled oats are soft and the liquid has been absorbed. You can add more milk if you like a thinner oatmeal.
  4. Right before the oats are done stir in the remaining ingredients and cook until the blueberry are warmed through.

Recipe Notes

If you forget to soak the oat groats overnight you can still make this recipe just add an additional 10-20 minutes cooking time for the groats to soften.
I like soaking the groats because they stay more firm in the oatmeal.
I like soaking the dates because it turns into soft, goey sweetness when they are soaked.
