Raw Chocolate Chip Maca BlondiesYou might asking yourself: what the heck is maca?  I had never heard of it myself until a couple of years ago.  Maca is one of those “superfoods” that you may have been hearing about lately.  Foods like kale or blueberries are superfoods, so you may already be eating superfoods and not even know it. Superfoods are nutrient-rich and considered especially beneficial for your health and well-being.

If you are looking to up your superfoods game, then these Raw Chocolate Chip Maca Blondies are for you.  I was trying to think outside the box and create a delicious way to get more maca into my diet other than smoothies.  This is IT!

Last month was my first month participating in the Recipe Redux group.  I am always excited to see what the theme for the month will be, and this month’s is CHOCOLATE.  With Valentine’s Day over you may have a lot of leftover chocolate laying around the house. These Raw Chocolate Chip Maca Blondies will put it to good use.

If you haven’t tried maca powder yet, then this would be a great way to start.  Maca is a plant (it looks similar to a large radish) that grows in Peru, high up in the Andes mountains.  It has been cultivated as a vegetable for over 3000 years.  It was often used as medicine; many people believe it has healing properties.  I would describe the taste to be nutty and similar to butterscotch (perfect for blondies).

Is Maca Nutritious?

Maca contains about 60% carbohydrates, 9% fiber, and 10% protein.  It also contains significant amounts of vitamin C, vitamin B, calcium, iron, potassium, copper, manganese, and fatty acids.

Maca has a higher amount of fat then other root vegetables.

What is Maca Used For?

Maca has been used to improve energy levels, increase fertility, balance female hormones, reduce the symptoms of menopause, strengthen weak bones, and boost the immune system.  This study states,”Maca is a plant with great potential as an adaptogen and appears to be promising as a nutraceutical in the prevention of several diseases. Scientific evidence showed effects on sexual behavior, fertility, mood, memory, osteoporosis, metabolism, and the treatment of some tumor entities.”

Maca works great with chocolate, so add it to everything from smoothies, to oatmeal and hot chocolate.  What is your favorite way to enjoy maca?  If you have not tried it before, have I convinced you to give it a go?

Raw Chocolate Chip Maca Blondies

Ingredients

  • 1 1/4 cups raw cashews
  • 1 1/4 cups raw almonds
  • 1/4 cup maca powder
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon vanilla powder or extract
  • pinch salt
  • 15 large dates pitted
  • 1-3 Tablespoons water *if needed
  • 1/2 cup chocolate chips

Instructions

  1. In a food processor, add the nuts and pulse a few times to break them up.
  2. Add the maca, cinnamon, vanilla, and salt, and pulse a couple more times until combined.
  3. While the processor is running, add the dates one at a time until the mixture comes together into a dough.
  4. If the dough seems too dry, add water 1 tablespoon at a time until firm but not sticky.
  5. Add 1/4 cup chocolate chips and pulse to slightly mix them into the dough.
  6. In a 8x8 baking pan lined with parchment paper, scrape out the dough into the pan.
  7. Press the mixture evenly into the bottom of the pan.
  8. Sprinkle the remaining 1/4 cup chocolate chips on top of the blondies and press down with your fingers to get them to stick.
  9. Let sit in the fridge for about 30 minutes.
  10. Cut into squares.
  11. Store in an airtight container for up to one week.
