I am a lover of green beans.  The fresh kind I mean.  I remember trying to choke down canned green beans as a kid because I just didn’t like the flavor or how mushy they were.  But fresh green beans…now those I could eat raw or cooked and be a happy girl.  My husband on the other hand needed more flavor one night when I told him green beans were on the menu for dinner.  He asked if I could make some sort of sauce for the green beans to give them more flavor.  Who am I to stand in front of a man and his desire for more flavorful green beans?  If it would get him eat more vegetables and enjoy them at the same time, then score one for team veggies.  So these sesame glazed green beans were born.  So if you are looking to get your family (or yourself) to enjoy green beans more then try this glaze out on them and see magic happen.  A healthy family is a happy family.

At only about 30 calories per cup for green beans I love snacking on green beans because they are slightly sweet and crunchy.  As a good source of vitamin K, fiber, and vitamin C these green beauties pack a nutritional punch.  The glaze was really a good idea by my husband because the little bit of fat from the sesame oil can help your body process the fat soluble vitamins found in the green beans.  The man does come up with some good suggestions sometimes (shh but don’t tell him that).

Sesame Glazed Green Beans

Ingredients

  • 1 pound fresh green beans stems removed
  • 1/4 cup low sodium soy sauce organic preferred
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons rice wine vinegar
  • 1 teaspoons grated fresh ginger
  • 1 teaspoons grated fresh garlic
  • 2 tablespoons sesame seeds
  • ***add some sriracha if you want a little kick

Instructions

  1. Cook the green beans by boiling water, dropping in the green beans, cooking for 3-5 minutes to keep them slightly crisp, drain the water, and rinse the green beans in cold water to stop the cooking.
  2. In a saute pan over medium heat cook the soy sauce, sesame oil, vinegar, ginger, and garlic for about 5-8 minutes until reduced and slightly thick.
  3. Add the green beans to the pan and toss to coat.
  4. Garnish with sesame seeds.
  5. Store leftovers in an airtight container for up to one week.
