Spring Pea Dip with Almonds, Ginger, and Cilantro

This Spring Pea Dip with Almonds, Ginger, and Cilantro is an epic dip!

Who would have ever thought that these ingredients would go so well together?  I mean, they are so delicious on their own, and I use these four ingredients so often in so many different ways, but I never thought to put them all in one recipe.  Surprise, surprise! They are a match made in food heaven.

I wish I could take 100% credit for the idea, but this recipe was inspired by an appetizer my husband and I had recently.  We went to a new restaurant called Mother Bunch and they had an appetizer called Vegetable Pâté.  In fact, my husband knew he wanted to order this before we even stepped foot in the restaurant.

This pâté was unbelievable. I knew at first bite that I had to recreate this recipe at home to share it with everyone!  Within a couple of days, I came up with this recipe.  The restaurant served their pâté with crostini, but being the dietitian that I am, I enjoy eating my version with crunchy raw vegetables and seed crackers.

This Spring Pea Dip with Almonds, Ginger, and Cilantro couldn’t be easier to make.  From start to finish, you can have a healthy appetizer or snack ready in five minutes.

I use these ingredients so often that I usually have all of them in my kitchen.  Having a fridge, pantry, and freezer stocked with healthy ingredients is really important when trying to eat better.  Finding easy recipes (especially recipes that can be used in multiple ways, like this one) that utilize nutritious ingredients is a great skill to learn. This dip makes a great sandwich spread or a sauce over some grass-fed steak.

I think that this Spring Pea Dip with Almonds, Ginger, and Cilantro has inspired me to experiment more with foods that I wouldn’t have thought to put together.  You never know what amazing flavors you might get.  What foods have you been surprised by that go well together? Ingredients

  • 2 cup frozen green peas thawed
  • 2 inches fresh ginger grated
  • 1/2 cup raw almonds
  • 2 heaping cups fresh cilantro leaves and stems
  • juice 1/2 lime about 1 tablespoon
  • pinch salt
  • 2 Tablespoons olive oil

Instructions

  1. Add all of the ingredients except the olive oil to a food processor.
  2. Pulse everything until finely chopped.
  3. With the food processor running drizzle in the olive oil and blend until smooth with a little texture.
  4. Serve with crostini, carrot sticks, cucumber slices, bell pepper wedges, or seed crackers.
  5. Store leftovers in an airtight container for up to 5 days.

    I made this yesterday, and it was delicious! I added more ginger (about an inch more), more lemon juice (several tablespoons), and I omitted oil and salt. It is light and refreshing. Thank you!!
