I remember loving Green Goddess dressing when I was younger.  The only version I ever had was the bottled stuff that we would buy at the grocery store.  I went many years without giving it one thought, but then I started to see it pop up again more and more as a salad dressing available in some of my favorite restaurants.  I gave it another go and boy I don’t remember why I stopped using it and on anything and everything.

Wikipedia says:

“The dressing is named for its tint. The most accepted theory regarding its origins points to the Palace in San Francisco in 1923, when the hotel’s executive chef Philip Roemer wanted something to pay tribute to actor George Arliss and his hit play, The Green Goddess. He then concocted this dressing, which, like the play, became a hit. This dressing is a variation of a dressing originated in France by a Chef to Louis XIII who made a Sauce Au Vert (Green Sauce), which was traditionally served with “Green Eel.”

 

Modify with your favorite herbs

I have seen Green Goddess dressing made with many different types of herbs so really you can use any that you like. My favorites are fresh tarragon, parsley, and chives.  Tarragon has a licorice flavor much like anise.  If that is not a taste you like, no problem. Substitute with another herb that you like.

I love this dressing any time of the year, but how beautiful would this be for holidays?  A nice green salad with seasonal fruits and vegetables thrown on top?  I picture pomegranate seeds, red beets, and pumpkin seeds with this Green Goddess Tahini Dressing drizzled over the top.  The holidays at their finest — and healthiest.

Green Goddess Tahini Dressing (Vegan, Nut Free, Paleo)

Prep Time 15 minutes
Total Time 15 minutes
Servings 1 cup

Ingredients

  • 1 garlic clove minced
  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 3 Tablespoons tahini
  • 2 Tablespoons fresh tarragon leaves chopped
  • 1/4 cup fresh parsley leaves chopped
  • 2 Tablespoons fresh chives chopped (or green tops of green onions work, too)
  • salt and pepper to taste

Instructions

  1. Mix all the ingredients together in a blender until smooth.
  2. Store in an airtight container in the fridge for 5 days.

Choose organic ingredients when possible.
